We’re Over the Hump!

Hey, hey, we’re over the hump! It’s a downhill slide to the weekend now, right?

After a cozy breakfast of leftover pumpkin steel cut oats, I skipped across the state line to visit my dentist. No really, when your dentist is a good family friend, the experience really does put a little skip in your step! Only problem is that I seem to be one of the lucky few who come home from dental checkups with a migraine.  =/  Something about the jaw joints giving referred pain, causing tension or migraine headaches. I dunno.

Anyway, I came home and snuck in a tasty lunch of leftover 17 bean soup and this sandwich:

Have you ever had the Laughing Cow spreadable cheese wedges? They’re similar to cream cheese, except much healthier at only 35 calories, plus 2 grams of protein a pop.I spread one wedge on whole grain bread, topped with a slice of turkey and a mound of sprouts.   A slice of juicy tomato would have put this over the top, but it was delicious as it was.

The migraine settled in and I was thankful the kids were at the babysitter’s house. After cranking out a little work from the couch, I got an hour of shut-eye to sleep the pain away.  I then headed to Panera for a change of scenery with the hope of a little productivity.  A cup of coffee and a few hours later, work was finished, the kids were home and I set to work on dinner:

Tostada Pizza!

Another kitchen staple of ours is the Flat Out wrap. Whole wheat and whole grain, the wraps pack only 90 calories and 0 grams of sugar, but 9 grams of both fiber and protein. 

Pop them in the 425 degree oven for 7 minutes before adding any toppings. While they bake, prep your ingredients. You can top these pizzas with whatever leftovers you can find, but tonight we went with a Mexican theme:

  •  mashed black beans (seasoned with cumin, onion powder and garlic powder)
  • shredded cheese
  • green onions
  • thawed frozen corn
  • fresh salsa

With these toppings on, bake for 6 or 7 more minutes, til everything is warm and melty.

I added chopped cherry tomatoes just before we sat down to eat.

Oy. This pizza is SO good. The crispy crust, creamy beans and flavorful toppings make every bite sensational.  This dinner totally works for me– quick and easy with minimal clean up.

Add veggies and dip on the side and you have a very filling, very nutritious, very loved meal!

Side Note: The family had a dance party in the basement while watching the CMAs tonight. Liv’s signature move is to jump up and down, flipping her hair everywhere (I have no idea where she learned that) while Ryan does deep knee bends and tries to snap. He picked up the woman-catching finger-snap from his father. See, Andrew’s go-to dance move incorporates snaps, leg lifts and karate chops, all while keeping his tongue out for added balance. We’re a pretty talented family, what can I say?

The CMAs did get me really excited for our trip to Nashville next week!  Any must-visit attractions, restaurants, etc??

    My friend jeannine went to a pancake restaurant there just today! She said they were incredible! Sorry…shes not responding…will have to get back with u on name.
