Two Delicious Recipes

I have two delicious recipes to share.  The first is focaccia bread that we had with our bbq chicken and fruit salad last night.  Have  mentioned how much I love my bread machine?

Garlic Focaccia

Recipe from

  • 1 1/4 cup water
  • 2 Tablespoons olive oil
  • 2 1/4 cups unbleached flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 2 1/2 teaspoons yeast
  • 1/4 cup olive oil
  • coarse salt

Assemble ingredients (except 1/4 cup olive oil and coarse salt) in the pan of your bread machine according to the manufacturer’s recommendations. Set for “dough.” Prepare pan by lining a rimmed cookie sheet with parchment paper and pour 2 Tablespoons olive oil over the surface of the parchment. When dough is complete, turn it out onto prepared sheet. Flip it over so that both sides are “oiled.” Spread dough in pan. Cover gently with plastic wrap and allow to rise, at least 30 minutes, but more if possible.

About 30 minutes before baking, preheat oven to 450°. Remove plastic wrap and drizzle remaining olive oil over the top. Sprinkle with salt and bake for 15 minutes, or until golden brown.


The second recipe is for Overnight Oats.  Being pregnant, I must eat breakfast and it must be filling. This is a great dish I can assemble the night before and take with me wherever I’m headed in the morning. Add in whatever fruit you have on hand and any flavor of yogurt.

Overnight Oats

  • 1/3 cup oats
  • 1 cup yogurt (any flavor)
  • 1 banana
  • any other fruit you have- frozen blueberries, peaches, strawberries, etc

Stir together the oats and yogurt.  Add in banana and top with frozen fruit. Stick it in the fridge overnight and enjoy in the morning!  The oats will be fluffy and soft- no cooking!  I like to add a scoop of grape nuts in the morning to give it a little crunch. You will be full for days!

    Does the frozen fruit soften enough? I hate frozen fruit still icy.

      oh wow, sorry for the incredibly late response! I’ve never had it stay frozen before, but I guess it could depend on how cold your fridge is. Keep it toward the front!
