Oh Yah, These Were GOOD!

I promised a review of a new cookie recipe last week and then forgot all about it! Better late than never…

They have an extremely creative name, thanks to Livy, so brace yourselves…

Chocolate.  Cookies.

  • 2 cups chocolate chips
  • 3/4 cup butter (1 1/2 sticks)
  • 2 cups brown sugar
  • 4 eggs
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 cups flour
  • ~1/2 cup powdered sugar

Melt chips with butter (Microwave 2 minutes, then stir until smooth).  Mix in sugar and cool.  Add eggs, mixing well after each one. Mix in vanilla, baking powder, and salt.  Add four and mix well. Chill at least 4 hours (overnight is best).

Preheat oven to 350. Roll in walnut size balls and drop in a bowl of powdered sugar. Shake the bowl until coated and bake on a greased cookie sheet for ~14 minutes.  Cool 2 minutes, then transfer to a wire rack.

Note: If the dough gets too warm while rolling balls, cover it and stick back in the fridge for awhile.

Makes 6-8 dozen
