Egg Salad Sandwiches

I know, egg salad isn’t the most appetizing of subjects for some people, but I happen to love it!  Here’s how I make it creamy, tangy and delicious:

Egg Salad

  • 6 hard boiled eggs
  • 1/4 cup mayo
  • 1 tsp Dijon mustard
  • 1/2 tsp regular mustard
  • 1/2 lemon, juiced
  • salt and pepper

I don’t really measure any of the ingredients, just eyeball it. 

Rough-chop the eggs, then mash with the back of a fork. Mix in all the rest of the ingredients, spread on homemade bread (if you’re lucky!) and enjoy!
