Steak Fajitas

This is a healthy and very easy, very delicious dinner that comes together in no time. Livy doesn’t so much love the peppers and onions, so I make her a cheese quesadilla out of the ingredients we are using anyway.  (Never do I make her completely separate food!)

Steak (or Chicken) Fajitas

  • 1/4 tsp cumin
  • 1/4 tsp oregano
  • 1/4 tsp paprika
  • 1/4 tsp chili powder
  • 1/4 tsp sugar
  • 1/4 t garlic salt
  • lime juice
  • salt
  • 1 TBSP oil
  • 1.5 lbs sirloin or round steak
  • 1 large yellow onion
  • 4 bell peppers (variety of colors)
  • flour tortillas
  • shredded cheese
  • salsa
  • sour cream 

Mix together spices, set aside.

Slice peppers and onions. Thinly slice meat.

Stir fry onions and peppers in oil with salt and lime juice (to taste).  Remove from pan, set aside.

Using the same skillet, saute beef. Sprinkle with the seasoning. 

When meat is cooked through, add peppers and onions. Heat through.

Serve on warm tortillas with sour cream, cheese, salsa, guacamole, etc.

Serve with chips and guac on the side.
