My very expensive, pride and joy camera is FIXED!  Thanks to a little internet searching, I found an answer to my auto-focus issue.  Thank goodness!

Livy and I had an exceptionally delicious lunch today:

Chicken Salad with Pasta, Corn, and Cherry Tomatoes


  • 2 boneless, skinless chicken breasts
  • 1.5 cups pasta shapes, cooked and cooled
  • 18 cherry tomatoes, halved
  • 3 scallions, finely sliced
  • 1 cup corn, frozen or canned (cooked if frozen)
  • 1/2 head Romaine lettuce (or any variety), shredded
  • 1 can chicken broth


  • 3 TBSP olive oil
  • 1 TBSP white wine vinegar
  • 1/2 tsp Dijon mustard
  • 1/2 tsp sugar
  • salt and pepper
  • 1 TBSP of the stock used to poach the chicken

Put the chicken in a saucepan and cover with broth.  Add water if necessary. Simmer for 20 minutes, or until cooked through.  Remove and cut into bite-sized pieces.  For the dressing, whisk together all of the ingredients. Mix together all the salad ingredients and toss in the dressing.
