Mexican Lasagna

Recipe stolen directly from my sister-in-law, Steph. She made it up… she’s that awesome. 

Mexican Lasagna


  • 1.5 lbs ground beef
  • 1 can tomato sauce, or a can of diced tomatoes, or fresh tomatoes **Note: I’ve only used the sauce, but a friend used a can of tomatoes instead and said it turned out a little dry.  If you like the “chunks”, I’d say use both!**
  • 1 can of corn or bag of frozen corn
  • 1 can green chilies or rotel, drained, optional
  • 2 cans kidney beans or black beans (drained)
  • 1 bag of crushed tortilla chips or  torn tortillas shells
  • 1 bag of mexican blend cheese or cheddar

1. Enlist the help of your favorite two year old.

2. Brown beef, add tomato sauce, corn, rotel, and beans.  

3. In a greased 9×13, layer meat, chips, cheese, repeat.

4. Try to keep your helper from sneaking cheese by the handful.

5. Bake at 350 until warmed through… 15 minutes or so.
