Pumpkin Baked Oatmeal

This breakfast can be assembled the night before and then popped in the oven the next morning.  It makes for a great start to the day!

Pumpkin Baked Oatmeal

  • 1/2 cup oats
  • 3/4 cup milk
  • 1/4 cup pumpkin puree
  • 2 tsp brown sugar
  • splash of vanilla
  • dash pumpkin pie spice, cinnamon, and nutmeg

Topping:

  • 2 TBSP sliced almonds
  • 1 tsp brown sugar
  • 1/2 tsp butter

 

Bake at 375 for 10 minutes. Remove and add topping. Bake 10 minutes more. You can stick this in the fridge the night before and warm in the microwave in the morning. 

Livy wasn’t sure how she was going to feel about this… she’s used to cereal and milk!  She progressed slowly, but successfully.  (Excuse the disheveled look, she just rolled out of bed and food is always the first thing on her mind!)
