Cilantro Lime Rice– Chipotle Style!

Oh yes, this rice is just like Chipotle’s!  I get a small thrill out of making restaurant dishes at home that taste just as good as the real thing.  

Cilantro Lime Rice

  • 1 tsp oil
  • 2 TBSP chopped cilantro 
  • 2/3 cup Basmati rice
  • 1 cup water
  • 1/2 tsp salt
  • Juice of 1 lime

In saucepan, heat oil until hot.  Add rice, stir and cook for 1 minute. Add juice and cook/stir one minute more. Add water and salt, bring to a boil.  Cover and simmer 18-20 minutes, until water is absorbed. (Don’t overcook or you’ll have mushy rice!  This is not Chipotle’s style..)  Add the cilantro and serve!
