Easy Herb Roasted Turkey

This is the best turkey I’ve ever had, if I do say so myself.  I roast a turkey every few months and leave a little in the fridge for sandwiches while cubing the rest and freezing in 2 cup portions.  (This recipe came from– I love that site!)

Easy Herb Roasted Turkey


  • 1 (12 pound-ish) whole turkey
  • 3/4 cup olive oil
  • 2 tablespoons garlic powder
  • 2 teaspoons dried basil
  • 1 teaspoon ground sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups water


  1. Preheat oven to 325 degrees F. Clean turkey (discard giblets and organs), and place in a roasting pan with a lid (or use foil).
  2. In a small bowl, combine olive oil, garlic powder, dried basil, ground sage, salt, and black pepper. 
  3. Slide your hands between the meat of the turkey and the skin to loosen the skin.  Work them all around the bird. Once the skin has been loosened, spread the herb mixture under the skin, all around, legs and all. If you have a little left, put it on top of the skin.  (If you put all the seasoning on top of the skin, it will be wasted when the skin comes off after cooking! ) 
  4. Pour water into the bottom of the roasting pan and cover.
  5. Bake for 3 to 3 1/2 hours, or until the internal temperature of the thickest part of the thigh measures 180 degrees F. Remove from oven and allow to stand for about 30 minutes before carving.
