Homemade Granola Bars

I found a great recipe for delicious homemade granola bars!  I’ve never been a huge fan of granola bars, but now I know why– I’ve never had them homemade!  These are much tastier and much healthier than anything I can buy in the store.  Granted, they are not completely healthy, but I like knowing exactly what is in them and having the option to switch up the recipe a bit.

Homemade Granola Bars

  • 1/4 cup butter
  • 1/4 cup peanut butter
  • 1/2 cup brown sugar
  • 2 TBSP corn syrup
  • 2 TBSP honoey
  • 2 1/3 cups quick oats

Preheat oven to 350. Grease an 8×8 square pan. On the stove, dissolve all ingredients except the oats.  Stir constantly until everything is melted and mixture is smooth.  Remove from heat, stir in the oats and mix well.  Pour into the 8×8 pan and bake for 22-24 minutes.  Cool 5 minutes and cut into 12 bars, then cool 1 hour more before removing from pan.  Do not let the pan cool completely before removing the bars or they will stick!

If you want to have a variety, try adding chocolate chips, raisins, craisins, or butterscotch chips when you add the granola.  You could also omit the peanut butter entirely and increase the total amount of butter to  1/2 cup.

We all love these- they were gone the next day!

I got this great recipe from Lynn’s Kitchen Adventures.  Her blog is terrific!
