BBQ Chicken Tacos

mmmm We love these easy, healthy and satisfying chicken tacos!  In the summer, we grill the chicken instead of broiling. 

BBQ Chicken Tacos

  • 6 boneless, skinless chicken breast halves (1 1/2 lbs)
  • 3/4 cup bbq sauce (any kind you please- we use Famous Dave’s varieties)
  • 1 box (10 oz) frozen corn, cooked (we often grill the cobs in the summer and cut the corn off to use on the tacos)
  • 1/4 tsp salt
  • 12 (6″) corn tortillas
  • 1 small head lettuce, shredded
  • 1 cup shredded, low fat Monterey Jack cheese
  • 2 scallions, thinly sliced

Heat broiler.  Brush chicken with 1/2 cup bbq sauce. Broil 4-5 minutes on each side until cooked (or cook these on the grill).  Slice breasts into long 1/2″ think slices. Mix with remaining bbq sauce, corn, and salt in a medium bowl. Keep warm.

Warm tortillas.

Place lettuce on tortillas, top with chicken. Garnish with cheese and scallions.

Delish!!  and oh-so-light and refreshing!
