Baked Turkey Sausage and Peppers

This recipe is not a “norm” for us. It’s a bit out-there when compared to our normal dishes, but my husband really enjoyed it and it was a nice change.

Baked Turkey Sausage and Peppers

  • 2 TBSP olive oil
  • 4 sweet red/green/yellow peppers, cut in 1/4″ thick slices
  • 2 large onions, halved and cut crosswise in 1/4″ thick slices
  • 1 fennel bulb, trimmed and sliced thin
  • 5 large cloves garlic
  • 2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 Italian turkey sausage links (1 1/4 pounds)
  • 1 large tomato, seeded and chopped
  • 3 cups hot spaghetti noodles

Pour oil in 13×9 dish. Heat briefly in oven at 425 degrees.  Don’t leave in long or you’ll fill your kitchen with smoke! Put peppers, onions, fennel, garlic, oregano, and salt/pepper in the heated dish.  Bake 15 minutes.

Meanwhile, prick sausages all over and cook in skillet on medium-high until brown on all sides (5-10 minutes).

Remove veggies from oven, Reduce oven to 375. Carefully stir tomato into pepper mixture and place sausages on top.  Bake 30 minutes until tender and cooked through.
